These BBQ garlic butter steak skewers are a simple, high-protein dinner with big grilled flavor. Tender sirloin steak bites are seasoned with smoked paprika, grilled until beautifully charred, and finished with a rosemary garlic butter. Crispy potatoes and grilled green beans complete the meal.

Serves: 4 | Prep: 15 mins | Cook: 20–25 mins

Ingredients

BBQ Steak Skewers

  • 1.5 lb top sirloin steak, already cut into 1-inch cubes
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 1 tbsp olive oil
  • Wooden or metal skewers

Garlic Rosemary Butter

  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • Pinch of salt
  • Optional: squeeze of fresh lemon juice

Crispy Potatoes

  • 1 lb potatoes, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

Grilled Green Beans

  • 1 lb fresh green beans, trimmed
  • 1 tsp olive oil
  • Salt and black pepper, to taste
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Prepare the potatoes: Boil the potatoes for 7–10 minutes, or until just fork-tender. Drain and toss with olive oil, smoked paprika, salt, and pepper.
  2. Season the steak: Place the steak bites on a cutting board or in a bowl. Toss with olive oil, salt, pepper, and smoked paprika until evenly coated.
  3. Assemble the skewers: Thread the seasoned steak bites onto skewers, leaving a little space between the pieces.
  4. Prepare the garlic butter: Melt the butter over low heat. Add the garlic and rosemary and cook for 1–2 minutes, just until fragrant. Remove from the heat.
  5. Grill: Preheat your BBQ grill to high heat. Place the steak skewers, potatoes, and green beans on the grill. Cook the steak for about 2–3 minutes per side, turning until nicely browned and charred and cooked to your desired doneness. Turn the potatoes and green beans occasionally until browned and tender.
  6. Finish the steak: Remove the steak skewers from the grill and immediately brush them with the garlic-rosemary butter. Add a squeeze of lemon juice if desired.
  7. Serve: Divide the steak skewers, crispy potatoes, and grilled green beans among four plates. Garnish with fresh rosemary or parsley and serve immediately.

No BBQ Grill?

No problem. The steak can be cooked as skillet steak bites instead. Heat 1 tbsp olive oil in a large skillet over high heat. Add the seasoned steak bites in a single layer and cook for 2–3 minutes per side until browned and cooked to your desired doneness. Finish with the garlic-rosemary butter.
